  Tomato Soup & my new Ascent Vitamix

So I guess we are back to cold weather at least for a few more weeks! I actually don’t mind, except for the fact that I have a handful of daffodils and tulips starting to bloom and I am concerned they may not pull though the snow. I love wearing cozy sweaters, tights and furry coats so a few more weeks of winter is a-okay with me.

Plus…cold weather means lots of yummy, healthy, homemade soups…and what could be more fun to make in my new Ascent Vitamix machine than a fresh tomato soup?

I love how simple and how deliciously healthy this recipe is.

Ingredients :
• 2 – 16 ounce cans of tomatoes
• 1 – onion
• 6 – cloves of garlic
• 1 – tbsp good olive oil
• 1/2 – tbsp sea salt
• kale sprouts & fresh parmesan for garnish

IMG_8487This new machine is seriously over-the-top incredible. From the pre-programmed settings, to the new crystal clear container to the entire sleek design of the overall machine, I am loving it so much. With this new machine you can also add a family of various sized containers to make blending things like custom spice mixes or on-the-go smoothies more convenient and portable. Trust me, if you can get your hands on on of these new machines, you are going to really enjoy it.

IMG_8494For this recipe I sautéed the onion and garlic in the olive oil. For some Vitamix recipes you can cook everything directly in your machine but for this recipe but I like how rich the cooked onions and garlic make the tomatoes super rich and decadent.  From here I opened the tomatoes, tossed them in my machine with the salt and added the translucent onions and garlic. Press the soup button on the machine and then wait the to see the Vitamix magic unfold.

IMG_8516IMG_8510I love how this new model even ramps itself up and down depending on the recipe, it is seriously too smart for itself. You just assemble the ingredients, press the button and then clean off the counter as your Vitamix does the work. It will shut itself off and you will have that delicious end product ready to share with your family and friends…voila!

IMG_8532I added a dash of parmesan cheese and a handful of kale sprouts then it was ready to serve. Healthy, creamy, simple-to-make, hot soup! The perfect meal on these cold (spring) winter days. Over the past weekend I had a few friends over for a little “Galentine’s Day” get together and brunch. There is nothing I love more that lots of pink decorations, balloons, roses, chocolate, bubbles and lots of great conversation with some gal pals.

When my guests arrived we had a bit of bubbly, a few carafes of coffee, some chocolate dipped strawberries and fresh croissants from On the Rise Bakery. 

IMG_1914IMG_1903IMG_1905bFor lunch I made a homemade tomato soup, a bubblegum-pink-hued raspberry vinaigrette tossed spinach salad and an open-faced, fried egg, avocado, tomato and cheese tartine topped with a toasted bread heart crouton. It was the perfect balance of healthy and decadent as a mid-day treat.

IMG_5214For dessert there was a plethora of sweets to choose from…and more bubbly of course. It really was a great way to spend a Saturday and catch up with some of my friends. If you are ever thinking of wanting to entertain, I gotta say brunch is a great excuse to get some friends together for a casual get together…give it a shot.

  Exploring the east side!!!

Hello “IHEARTCLE” friends! So happy to be back, on my laptop, trying to settle down and plan for the upcoming week. The last few days have been a whirlwind around here and so  I took a bit of a blogging break as something had to give while my family was making the big move from one side of town to the other. I am happy to tell the tale that we have officially crossed the river and are ready to start exploring the east side! (Photo of my car all packed up with some necessities!)

I have had so many of you ask me “WHY?” “Why did you swap sides of town?” Well, Mr C. and I started lookimg for a new home last fall. While we love our west side mid-century it was time for change. With the addition of “toddler ninja,”  visiting Nanna’s & Pappa’s, lots of big (plastic!) toys and various new hobbies and interests we were outgrowing our home bit by bit and we knew it was a matter of time before we would move.

We looked at a handful of homes in our familiar west side suburbs, even put out an offer or two, but in the end nothing stuck. We actually had seen our new home on google last fall. It was one of those that when we saw it online we thought, “wow, that house is so different, wouldn’t it be cool?” But is was on the east side…we hadn’t even considered changing sides of town. Mr C. grew up in Avon Lake and I was a Lakewood-ite through and through, how could we even consider moving east?

It was the dead of winter; I think it was in February and we were having brunch with some of our favorite CLE friends and Mr C. twisted my arm to go to the open house…he promised toddler ninja would nap on the drive back and I was sold. From the moment we took off our shoes and stepped inside the house I was in love. It was just what we had been looking for….open floor plan, a bit vintage although with modern possibilities and more space than we currently had. Only thing was, it was on the east side and how could we make the change to the other side?

We thought long and hard…months in fact. We would literally go sit outside the home’s multiple open houses to watch as other families went inside of “our home.” Every time, we felt more and more compelled to make an offer and see how things went from there. As we mapped our commutes, explored schooling possibilities, taste-tested foodie hot spots (OMG, Ninja City delivers!!!) we came to the decision that since we loved living in Cleveland, we should at least see what the other side of our amazing city has to offer and the rest is history.

So last week we packed up and headed east. We have been unpacking and organizing, and purging and exploring and honestly it has been scary and exciting and confusing (I have no idea how to really get around over here!) but the moment we pulled into the driveway as official east-siders and there was the coolest “welcome to the east side”  package from some friends I knew we had found our new place to call “home.”

I apologize if I have missed your notes, emails or calls. Last week was just about trying my best to focus on our family and all the changes. Toddler ninja was pretty thrown off and confused and let’s not even talk about bedtimes or the daily thunderstorms and lack of power which made the first few nights in our house kinda spooky. Over the next few weeks I have a few, very fun posts planned for you guys. We will finish off the summer strong and relish in these high temps and long summer nights.

I don’t know about you, but I am finally just getting into the summertime mood. Flip flops, lots of sunscreen, evenings’ at the pool and many meet ups with friends on patios. Summer is in full swing. With these super hot temps it’s the perfect time to experiment and try out a few fresh and sweet summertime cocktail recipes and I have I got a few great ones for you!   my trip to Target

targetSo over the weekend I did the typical Saturday trip to Target. I had a list and really just wanted to run in and out, picking up exactly what I was there for. I needed some eye makeup remover and face wipes, I wanted some mints for my car, I also wanted to get some new lotion to cure the winter-time dry skin and I had seen these cute plastic trays that I wanted to see if they still had in the dollar section. Didn’t seem like a big shopping trip perhaps under twenty dollars? I could be in and out quickly because I was sure it would be crowded on a Saturday afternoon…but does that really ever happen when you go to Target?

When in the said dollar aisle I discovered their latest, sweet stationary line filled with patterned file folders (3 for $1,) mechanical gold foil pencils (4 for $1,) pretty packs of thank you notes (6 for $1,) tiny pink post it notes  and a bold floral pattern post it pad.

Not only did I get lured into the budget stationary line, I found a new set of Nate Berkus sheets on super dooper sale and I totally snapped them up!

So, while my trip was supposed to be ten minutes and twenty dollars…I spent about a half an hour perusing the end cap sale sections and spent just under fifty dollars. Please tell me this happens to you too?

All in all I guess it could have been worse…I mean did you see Target is now carrying Vitamix; also displayed on an end cap? So tempting…Happy shopping, happy Target everybody.
